Cake Balls

My sister told me about cake balls before Christmas. I'm only getting around to making them now though. I have a special event at school tomorrow that I wanted a treat for.

Here's the shopping list:

cake mix (your choice)
frosting (compliments cake choice)
chocolate candy coating (vanilla or chocolate)
parchment paper (for drying balls on)

Bake the cake according to directions and allow to cool. It doesn't have to be crazy cool just cool enough to work with.

Don't cry it will all work out in the end but you must now crumble the cake into a bowl.

Now, my sister said to put half the icing in but I put it all in. Try putting half if you'd like to cut some of the sweet. I'm making these for kids so say no more.

It mixes well.

The next step is shaping the balls. It's a little messy. I used my hands you can use a melon baller. Also after rolling your balls it's helpful to stick them in the freezer for a bit. I put mine in a roasting pan at this point.

Now you may wonder why I've jumped from mixing to finished balls. My hands were messy between those times. Rolling balls, melting chocolate and dipping balls and then all of a sudden I was done and I hadn't stopped to take a picture.

Anyway, these coatings can be melted in the microwave. Just follow their directions.

I could use some tips on chocolate coating. Picking the balls out of the coating and putting them on parchment was difficult.

But Ro says they're yummy and each person will get a small individual treat. Thanks Amy!
